I love this dish; it can be prepared ahead of time, and if you have a timer on your oven, you can set it to be ready when you come home. Pairs well with the chicken recipe below.
Acorn Squash Ingredients:
1/2 squash per person
dried or fresh cranberries
ground cinnamon
butter or substitute
water
agave or maple syrup if using fresh cranberries
Instructions:
Preheat oven to 400 degrees.
Cut squash in half and clean out seeds.
Place squash onto ramekins so that they don't tip over during cooking.
Fill squash with cranberries, butter and then add water to ~1/2 inch of top. Sprinkle on cinnamon. Add agave or maple syrup if desired.
Place on tray and cook in over for approx 45-60 minutes, until soft.
Optional Additional Sides: Salad, steamed broccoli, roasted string beans
