Healthy "Spaghetti"

My mother in law made this recently and it was FANTASTIC! If you have a preset on your oven, you can prepare it before you leave, and leave it in the oven to be ready when you come home!

Ingredients:
1 large spaghetti squash, halved and de-seeded
1 large onion, chopped
6 oz mushrooms, sliced
2 tomatoes, chopped
Oil
Salt
Pepper
Optional:
Did I omit your favorite vegetable? Add it in!
Fresh basil, chopped
Cheese or cheese substitute
Instructions:
Preheat oven to 400 degrees.
Place Spaghetti squash upside down in pan with ~1/4 inch water in pan.
Cook spaghetti squash for about 75 minutes, or until soft.
Remove from skin using spoon and
place in bowl.
Cook cut vegetables with oil in pan on stovetop until desired consistency.
Add salt and pepper to taste.
Add all ingredients to squash, mix, and season to taste.
Enjoy the season's harvest!
