GF/DF Chocolate Mousse!

OK, this one has gotten rave reviews from a wide range of critics, so I'll call this one a winner! It's super easy, can be made ahead of time, and because it's made with tofu, qualifies as something I'm willing to give my kids, and they are more than willing to eat!
Ingredients:
1 package organic silken tofu (12.3 oz)
1/2 can coconut milk (shaken, so it mixes)
3/4 cup soy or almond milk 1 cup semi-sweet chocolate chips
1-2 tablespoons vanilla, to taste
Rasberries and cinnamon for garnish
Directions:
Place tofu, coconut milk and vanilla into cuisinart.
Boil 1-2 inches of water in a pot. Place the chocolate chips and soy/almond milk into a metal bowl, and place it on top of the pot, making sure that it doesn't touch the top of the water.
Stir until melted.
Cool for a few minutes, then add to cuisinart. Blend until all ingredients well mixed.
Either pour into single-serve ramekins or into serving bowl, place in fridge to chill for 2-3 hours.
Garnish once chilled.
Enjoy, pray you can get ahold of more silken tofu, repeat process again!
