Black Bean Soup

On cold days like these, it's great to have a soup that's easy to make, quick and satisfying! Pair it with brown rice, and you have a complete meal.
We feed a lot of people, so this recipe is designed to feed a family of 6 with leftovers.
Ingredients:
2 large onions, chopped into medium sized pieces
3 large carrots, peeled and sliced/chopped
4 sticks of celery, washed and chopped into medium sized pieces
6 cans of organic black beans, rinsed
2-3 limes
salt
pepper
Directions:
Add onions, carrots and celery to pot and saute until soft
Add 2-3 cans of beans to vegetables
Add water to cover
Using immersion blender, blend until it's mostly blended (this is a matter of personal preference)
Add the rest of the beans, salt and pepper to taste, and juice from the limes, to taste.
Serve over warm brown rice.
Optional:
Additional chopped onion, lime juice, hot sauce!
