Russian Style Cabbage Salad

We originally started eating this about 16 years ago, and over the years have modified it to be made only with lemons, and no vinegar (since we're all on sugar-free diets!).

This is a simple and easy recipe that can't fail!

Ingredients:

1/2 head white organic cabbage, shredded

1/2 head purple organic cabbage, shredded

1/2 cucumber, cut in half the long way and thinly sliced

4 large carrots, washed and thinly sliced

1/4 sweet onion, thinly sliced

3 lemons, juiced

salt, pepper and oil to taste

Optional:

Dill, parsley or both!

Instructions:

Mix all ingredients together. Salt, pepper and oil to taste. Mix well. Taste. Add more flavor if needed. If you did it right, restrain yourself from eating the whole salad before dinner!

Serves 8
