Mushroom Leek Soup!

OK, this soup will make you look like a pro, and the best part is it's SUPER easy!

Ingredients:

2 large sweet onions, cut into chunks

2 leeks, sliced and washed really well; at least 3 times, until there is no sand left in them! **This is the most important step, since a sandy soup is uber unpleasant!

12 oz mushrooms, cut into 4 pieces

1 can coconut milk, full fat!

Oil to saute with

Salt, pepper, garlic powder to taste

Directions:

Saute onions and mushrooms in large pot with oil until mostly cooked. Add leeks, and cook until soft.

Add coconut milk, salt, pepper and garlic powder.

Either immersion blend until smooth, or put into blender and blend until smooth.

Garnish, serve over brown rice.

Optional: Shredded cheese, scallions, peppers
